Mixed Dal & Vegetable Handvo – A Traditional, Protein-Rich Gujarati Delight
Mixed Dal & Vegetable Handvo is a nutritious Gujarati savoury cake made with a blend of lentils, vegetables, and aromatic spices. Unlike refined flour snacks, this wholesome dish is naturally rich in protein and fibre, making it a filling breakfast, lunch, or evening meal. Soft on the inside with a lightly crisp exterior, Handvo is an excellent way to include more lentils and vegetables in your diet.
Ingredients
- ½ cup mixed lentils (chana dal, toor dal, urad dal)
- 1 cup grated bottle gourd (lauki)
- ½ cup grated carrot
- 2 tbsp yogurt
- 1 tsp grated ginger
- 1 green chilli, finely chopped
- ½ tsp turmeric powder
- Salt to taste
- 1 tsp fruit salt (Eno) (optional)
- 1 tsp mustard seeds
- Curry leaves
- 1 tsp sesame seeds
- 1 tsp oil
Method
- Soak the lentils for 6–8 hours and grind into a thick batter.
- Mix in yogurt, grated vegetables, ginger, chilli, turmeric, and salt.
- Add fruit salt just before cooking for a softer texture.
- Heat oil in a non-stick pan and add mustard seeds, sesame seeds, and curry leaves.
- Pour the batter into the pan and cover with a lid.
- Cook on low heat for 20–25 minutes, then carefully flip and cook the other side until golden.
- Slice and serve warm with green chutney or plain yogurt.
