Chickpea & Paneer Stuffed Bell Peppers – A Colourful, Nutrient-Dense Meal

Ingredients
- 2 large bell peppers
- ½ cup boiled chickpeas
- 100 g low-fat paneer
- ½ onion, chopped
- 1 tomato, chopped
- 2 garlic cloves
- ½ tsp oregano
- ½ tsp black pepper
- Salt to taste
- 1 tsp olive oil
Method
- Cut the tops off the bell peppers and remove the seeds.
- Mash chickpeas lightly.
- Mix chickpeas with paneer, onion, tomato, garlic, oregano, salt, and pepper.
- Stuff the peppers generously.
- Place in a baking dish and drizzle with olive oil.
- Bake at 180°C for 25 minutes.
- Serve warm.
